Gyokuro, which is also known as “jade dew”, is a premium Japanese green tea known for its unique cultivation process and exquisite flavour profile.
Three weeks before harvest, the tea plants are covered with shade cloths. This reduces sunlight exposure, enhancing chlorophyll levels which is linked to higher concentrations of antioxidants. During the first flush in late spring, only the top buds and the first two leaves are carefully hand-harvested. The freshly picked leaves are spread out to wither slightly to reduce moisture content and prepare the leaves for rolling. Then, leaves are steamed to halt oxidation and preserves vibrant green colour and fresh flavour. After steaming, the leaves are rolled and dried to remove excess moisture.
Gyokuro has rich umami taste, which is savoury flavour that distinguishes it from other green teas. The shading process also contributes to its natural sweetness and a complex aroma.
How To Brew
HOT BREW:
🔥 For warm tea, the key point to prepare this tea is to use hot water at a relatively low temperature, and take time to slowly extract the taste and nutrients. This infusion method allows for the umami to maximize.
Once the water is boiled, it’s important to lower the temperature of the water. For Gyokuro, it’s best to lower the temperature to between 50 to 60 degrees Celsius by transferring the water 2-3 times to cool it down.
Once the temperature is optimal, pour the water into the pot, and start the infusion. Steep for 2 minutes depending on the depth of taste you love!
🧊 For cold tea, Combine the gyokuro leaves with some ice cubes in a pitcher, as the ice melts, you can extract the tea and enjoy it anytime.
