Dong Ding Oolong is a classic high mountain tea. Producing premium Dongding Oolong requires high altitude and cool climate, Dongding Ooling, often described as “green leaves with red edges” for the unique colour of its tea leaves, is finely made through complex processes : sunshine withering, cooling, shaking, kneading, baking, bag-rolling, re-baking and roasting.
Dongding Oolong tea contains more carbohydrates and theobromine, therefore, when describing the flavor of Cold Top Oolong tea, most of the people would describe it as rich, solid, strong, etc. In the whole delicate re-roasting process, the first part will produce sodium reaction, which will produce sweet substances similar to the structure of maltose, which is generally the case with light-roasted teas; and the middle and latter part will produce the caramelization reaction, which will make the tea soup have a deeper roasted flavor plus the sweetness and the sweetness. Frozen Top Oolong has been famous for a long time, and the sweet honey flavor has made this one of the most famous oolong teas in Taiwan.
